    FRANGO NA MALZEBIER

     
    INGREDIENTES
    2 bandejas de coxa e sobrecoxa Minuano
    (1,4kg), 1 garrafa de 760ml de malzebier, 2
    dentes de alho, 1 e ½ colher rasa de sopa de
    sal, 1 colher de chá de pimenta-do-reino
    moída, ½ xícara de vinagre, 1 colher de chá
    de manjerona seca, 1 folha de louro, 200g de
    cenoura, 25g de manteiga, 2 colheres de sopa
    de azeite de oliva, 1/3 de xícara de conhaque,
    1 colher de sopa cheia de maisena e papel de
    alumínio. Acompanhamento: macarrão
    furadinho ou purê de batatas.
     
    1° - 
    Liquidifique a malzebier com o alho, sal, pimenta-do-reino, vinagre, manjerona e louro. Derrame sobre as coxas e sobrecoxas e junte a cenoura descascada e em rodelas grossas. Pode ser feito de véspera.
    2° -
    Esquente numa panela de fundo largo a manteiga com o azeite e doure rapidamente o frango aos poucos.
    3° -
    Ponha novamente os pedaços de frango na paneIa e flambe com o conhaque.
    4° -
    Acrescente o tempero da malzebier com as rodelas de cenoura. Antes de colocar a tampa, cubra a boca da panela com papel alumínio e então tampe. Deixe ferver por 30 minutos e revise os temperos.
    5° -
    Retire os pedaços de frango, desengordu- re e engrosse com a maizena dissolvida num pouquinho de água fria.
    6° -
    Sirva com a massa na manteiga ou purê de batatas.
